We maintain our own garden at The Classic Cafe. Lovingly referred to as the Chef’s Pantry, our garden is where Chef Charles Youts turns for inspiration. Charles creates new and unique specials based on what’s fresh and ripe in the garden.
The Chef’s Pantry Garden in early summer
Our peach trees have really come into their own, and we harvest in late July. We use the peaches for sauces and desserts.
We grow okra all summer long, and our shrimp and okra feature appetizer is a guest favorite in summer.
The spaghetti squash was ready to begin picking in July this year, and we started them off as a wonderful spaghetti squash soup
It’s not a garden without a bunny in the cabbages.
We harvested these peppers right before the first freeze of fall last year.
Our garden figs ripen in July and are an inspiration for things like fig barbeque sauce, and focaccia flat bread with garden figs, house-made ricotta, prosciutto, arugula, sweet peppers, balsamic syrup, and lemon oil.
